Banana Tofu Pudding


Have some extra bananas hanging around?  Why not make some banana pudding?

Banana Tofu Pudding

16           oz. silken tofu
2 1/2       ripe bananas (2 for smashing, 1/2 cut into pieces)
1            teaspoon vanilla
2            tablespoons agave
              Cinnamon for dusting (optional)
              Crushed graham crackers for topping (optional)
           
Put all ingredients (except for 1/2 diced banana) into food processor or blender.  Blend until smooth.  Add diced banana and chill.  Top with crushed graham crakers and a touch of cinnamon.

    1. I'll give the Peanut butter a try and use maple syrup for sweetener. We use either agave, maple syrup or sugar in our vegans recipes. Thanks for the suggestion!

  2. I substituted mashed, de-seeded guava for the agave. Not as sweet as I was hoping, but then again, my bananas weren't as ripe as they should have been. Still pretty tasty, and worth another try!

  3. I added vanilla bean with a little pure vanilla extract and it is pretty taste.
