Banana-Oat Breakfast
Cookies

Makes 11 cookies
3 ripe
bananas
1 & 1/2 cups
rolled oats
1/4 cup
almond or peanut butter
1 tablespoon
agave
1 teaspoon
vanilla extract
pinch
of salt
1/2 teaspoon
cinnamon
1/2 cup
unsweetened coconut flakes
1/3 cup
nuts, such as walnuts, almonds or pistachios, roughly chopped
1/3 cup
dried fruit, I used dried cranberries
Heat oven to 350 degrees. In a large bowl, mash the bananas with a fork. Stir in the oats, almond butter, agave,
vanilla, salt and cinnamon until well combined. Fold in the coconut flakes, nuts, and dried fruit and let
the mixture sit for 10 minutes so the oats absorb some liquid.
Drop by quarter cupfuls onto a parchment lined baking
sheet. Flatten cookies with a fork
and bake 22-25 minutes or until golden brown.
Cool on a baking sheet for a few minutes, then transfer to a
cooling rack.
