Cucumbers




No recipe on this post, just a reminder to not forget how amazing raw cucumbers are!  Kevin picked these sweet cucumbers up at the Farmer's Market and I decided to precut a bunch to have ready to snack on.  Leaving the skin on adds extra nutritional value and also keeps it crunchy.  All you need is a little salt and that's it.  Cucumbers are a great source of potassium and contains unique anti-oxidants -- Vitamin-C, Vitamin-A and Vitamin K.  Try replacing a salty chip snack with a couple of cucumber slices!
